So my recons find the mines, how do I correctly target the mines to blow them up without having my guys get damaged from them?

Attack ground with atg or tank, mortar barrage, whatever.

attack with recon squad (make sure no member of the squad is on/near the mine)

Mortar is usually the best.

Usually you will have to damage yourself anyway, i recommend a CCT to run over any mines that are in critical locations. 

btw Remember butterfly mines can immobilise.

I never have time to pay a lot of attention, but it seems that the recons dont do damage to them? ill have to pay more attention next time though.

Just shoot it from a safe distance, dont bother try to hit it with a mortar or ATG.

If you detect it with a recon squad then back up and take shots at it.  Should die after 1 or 2 volleys of bullets.  No need to waste an on-map on it.

If you know it's there but can't detect it, use a mortar.  If you don't have a mortar, get some type of handheld AT.  If you don't have handheld AT, try an AT gun.  If all else fails, use an on-map (not very good use of an on-map though imo) or use a fodder squad to detonate it.  Tanks are good too cause they generally have enough splash damage to detonate the mines even though they don't hit it spot on.
