Is it better to keep on attacking a adjacent sector, or is it better to immediatly start to defend whatever you have taken over?

Depends.

I would say defend if and get it over 2000 pts in defence, but also, you need to buff the Support too.
When support reaches 0, you start reducing the defence modifier.  Which is a multiplier for the amount of defence points.

So, if the adjacent sector is a buffer, and easily fallen - go straight to attack.  If not, defend it for a while.
