b. Does anyone know of any decent texture packs to use for the new steam version - if so please link them and if possible can someone give a brief description of which folder to pop them into

Im not sure there are any up to date functional skinpacks for eir. Volsky added a BUNCH of new skin paths in the last year or so. Still, you usually just wanna paste your new skinpack into the eir archive folder and then add the name to the eir module file.
