I didn't buy stormtroopers so I can purchase tank upgrades. So what should I use the other infantry for?(volksgrenadiers, grenadiers, knight's cross holders)

Depends on who you want it to play out. If your going to go for a veyr Assault heavy play then you'll want Volks, they are cheap disposable and throw alot of grenades.
If you want a good baseline infantry force with lots of utility your best bet is Grenadiers. You won't get as many as if you used Volks but they stand up alot longer in combat. In either case it's a good idea to have a callin of 2x KCH as Assault infantry. I find alot that when I need an assault force I don't have one.
It is possible to go too heavy on KCH, they are expensive and you'll quickly burn through them if you use them as mainline infantry especially against an artillery user. a few callins of them is all I'd ever use.
Things that work well for Blitz are Volks/Stugs (enough units to not be overly worried about losses, and you can Assault critical weapons teams) Volks/Tigers is another thing that can work. Assault any ATG's you find and you'll quickly force the game on a lack of AT options by your enemy

Volk spam with Fausts is awesome. Its only 30muni for 2 fauts, that's seriously dirt cheap, and it also makes the enemy think twice about trying to run you over or get close And if you're in a pickle and you need to pull your volks off, seriously and you've haven't used a faust or you got one, just faust the nearest living thing. Be it a tank, atg, mg or even some rifle squad, the chance to crit and kill them is too tempting to past, and hey, you're pulling them off, may as well get your use of them out Btw, if you're seriously thinking about use Volk Faust spam (my defence company has 18 volks with fausts, or at least it did until I got rid of a few volks for support ect) then try and get the thing that gets you an free faust, if you got 18 that's an extra 270muni worth of crap for free :3 Least that's my take on what you should do :3

Well thats 27 pop
Tiger +2 Volks with Assault+faust =26
Assault the ATG, faust the M10's(faust the same one and Target fire it until the gun is destroyed or it dies) then target the second one, then use Tiger on the HMG or assault it if you really need to
Of course if you wanted Schreks you could use those on the M10's instead and Assault the ATG with a volks squad. HMG's suppress but take a while to kill. So Assault negates the suppression and your Schrek grens should not be close enough to get caught in the Suppression radius

rifle87654, play the game and work it out with those brains of yours! The best way to learn is through experience. Try all the units in different combinations and find something that works for you. We can give you brief guidelines on what works and what doesn't, but it's really all up to how you execute it.

If he doesn't commit the M10's(and a good player won't) you win the engagement and kill an ATG with virtually no loss

If he throws a theoretical 27 pop group at you it's perfectly fine to counter with a similarly sized group. If he said ATG + 2 M10's I would have countered with a 25 pop callin because that could potentially be a starting group(but you'd be insane to try that)

Don't see anything wrong with a double m10 and ATG start. Just going to have to tell your allies that your doing so, and hope its not R+ Mode... Btw, Assault nades, are they designed to just cause loads of damage (with no kill crits?), since in vCoH the nades never seem to kill ?

Besides the fact "Murphy's/Sod's law" will come into play, meaning you will kill more then one dude, and your going to seriously injury the rest of them. And more importantly, you will spend about a minute waiting for it to hit and kill a volk. So really, its not smart, its probably stupid more then anything :/
