Honestly, volksgrenadiers and grenadiers should be left to their respective uniform types--in fact, Volksgrenadiers were largely equipped with trenchcoats in the closing months of the war because the uniforms were so poorly made that they retained little to no heat. Grenadiers would almost ever wear them for an extended period; a trenchcoat was sort of an honor between officers and men with medals (such as the KCH).
Try combining (in both skin and model) the legs of a Grenadier with the torso and Kepi-style hat of the volksgrenadier to create a Feldwebel or other NCO rank. It might also pay off to add binoculars to further set him apart.
Pionieren truppen aside from SS-Brandtrupp (burn squads) that were specifically ordered to, rarely wore swastika patches and/or armbands, most of those divisions wore the standard curving "cross" from classic WW1 germany. Most pionieren squads also preffered to wear long boots similar to those worn by Volksgrenadiers because of the undesirable weather they often had to assault positions in. The goggles should be left on their helmets as they were frequently worn when strining barbed wire and during flamethrower-invloving assaults.
The "alias Volksgrenadier" unit should be the standard WM Grenadier, and the Panzergrenadier would make a great (and historically accurate) replacement for the actual PE Panzer Grenadier skin and model. What exactly will happen to the sniper, though, if the Panzergrenadier skin is used in that fashion?
